I was casually eating a pancake when out for a meal with my boyfriend and friends and was saying how delicious it was. My friend Patrick replies “You haven’t tried one with buttermilk yet.” So now here I am on Pancake Day tucking into my buttermilk pancakes! I had about five and now I’m not going to eat for the next few days as I am all full of pancakes and will burst soon! I had to share this recipe as it is so lovely and so easy to make, thanks Jess and Patrick!
You will need:
– About 110 (4 ounces) grams of plain flour
– 1 teaspoon of baking soda (bicarbonate of soda)
– About 55 grams (2 ounces) caster sugar
– 1 egg
– Half a pint (280ml) of buttermilk.
Mix all the ingredients together until there are no lumps. Heat a heavy based, non-stick frying pan (or skillet if you have one) and brush with a little butter. Make sure it is on a medium heat and not roasting. Ladle or pour a small amount of the pancake batter onto the pan. When the top starts to bubble carefully flip over to the other side. Overall time to cook should be about 2-3 minutes.
